Ingredients for 2 servings:
Salt and Pepper to taste
Sprinkle of Parsley or Chives (if you want to be fancy)
Preheat oven to 400 degrees. Slice Avocado in half and remove pit. Use a spoon to scoop out enough flesh to make room for the egg. Gently crack egg into the hole while keeping the yolk intact. Sprinkle with salt and pepper and back in oven for around 15 minutes until white is set and yolk is cooked to the desired consistency. Sprinkle with herbs before serving and enjoy!
