Egg in a 'Hole' Lotta Avocado Goodness

If you are an avocado fan (I know you're out there), then you will love this tasty twist on a breakfast staple. Why not switch up that traditional scrambled egg routine and opt for this easy and eye-pleasing recipe that is full of protein and healthy fats.

Ingredients for 2 servings:

1 Avocado

1 Egg

Salt and Pepper to taste

Sprinkle of Parsley or Chives (if you want to be fancy)


Preheat oven to 400 degrees. Slice Avocado in half and remove pit. Use a spoon to scoop out enough flesh to make room for the egg. Gently crack egg into the hole while keeping the yolk intact. Sprinkle with salt and pepper and back in oven for around 15 minutes until white is set and yolk is cooked to the desired consistency. Sprinkle with herbs before serving and enjoy!
